The Fourth of July is just a few days away and this weekend I have numerous events and celebrations so I’ve started prepping festive desserts and snacks to bring along. I didn’t want anything too sweet so I opted for berry shortcakes using this plain scone recipe and luckily my favourite fruits, strawberries, raspberries and blueberries, fit the red, white and blue theme perfectly. I made the blueberries into a blueberry compote and mixed a little icing sugar into the whipped cream to add a touch of sweetness. I sliced each scone and topped each half with the blueberry mix and a couple of slices of strawberries before finishing with a dollop of whipped cream. They are the perfect addition to a picnic or barbecue and you can play around with the scone size depending on the occasion.
